Today considered the national drink for most of South America, due to both its nutritional benefits & warm social atmosphere. Yerba maté has rooted itself into different cultures, each with its own unique and interesting ways of enjoying a maté.This wonder tea may be the closest natural beverage to a whole body tonic for body & mind.

Maté is traditionally drunk in a very social setting, such as family or friendship gatherings. Yerba Maté is a product with unquestionable qualities, and is an ideal drink to enjoy at all times, by all ages. There are two ways of preparing it, though for each there are as many variations as there are consumers.

POURED MATÉ

Yerba is prepared in a small gourd (called the “maté”), filling the container halfway with the dry Yerba, pouring hot water that should not have been boiled (ideally 80°C), into the maté (container). It is then drunk through a metal straw called a “bombilla”(pronounced bombicha), that has a filter on its lower end to prevent particles from being drawn up. This is the traditional method of preparation in Argentina, where it turns more into daily ritual than a simple drink. A glass or metal cup can also be used instead of the “maté” gourd.

“In Argentina they often use a grapefruit or an orange instead of a maté gourd. Make a hole in the top of the grapefruit and remove a little from inside (taking care not to damage the bottom). Then put the bombilla and Yerba and……..voila!!!! You can pour hot water as a usual maté or you can pour cold water (called “Terere”).”

CUP MATÉ (Maté Cocido)

Maté can be prepared in a cup using loose leaves, just like any other tea. Because it’s not fermented, Yerba steeps in hot or cold water and can be sweetened with honey (according to taste).Add a mint leave, a piece of cinnamon or a piece of lemon.
The drink has a pungent taste like a cross-between green tea and coffee, with hints of tobacco and oak. Sugar or honey are sometimes added if desired, creating Maté Dulce — sweet maté (maté without sugar is called Maté Amargo or bitter maté)..

It is considered bad for the gourd (especially for the natural gourds, i.e. squash or wood) to be used for Maté Dulce, therefore it is normal for households in which drinkers of both kinds to have two separate gourds.

Mate’ On The Go:

4 heaped tablespoons per litre through the percolator

Leave to chilled overnight in the fridge

Refreshing for body, mind & mood.

For each 300 ml mug, add two heaped tablespoons of Yerba. Then add cold water to it, about 20% of the intended volume that you wish to brew. Stir this up and let it rest for a few minutes. Then pour in boiling water. Because it mixes with the cold water already in the brew, it comes down almost instantly to an ideal Yerba maté brewing temperature, without “burning” the herb and producing bitter flavours. Stir the concoction, then let it steep for at least eight minutes – no less!Stir it once again, then press down the plunger. Delicious and simple. I drink it straight!

“Fruit juice concoction:

Step 1. Steep Yerba in water (ratio 1 teaspoon of Yerba: 1 cup of water) until the liquid is dark in colour – that’s when you know it is strong!

Step 2. Strain the liquid (Yerba) and add it to any fruit cocktail to give that extra jolt. My preference is organic cranberry and apple juice.

Alternative:

Add fruit juice instead of water – try it with Guava Juice….yummy!!

Use a french press/ coffee machine/teapot on the stove/let it steep in the sun, make it strong, chill it and put it in a Camelback for long bike rides hikes or climbs!

Not brewed at all:

Take 56-115g. fruit place in 500ml contaner. Add Mango puree of 85-113g. Add about 113g Yerba. Add 118ml. ice and whip into a smoothie and drink straight up.

Put six heaping tablespoons in a 2L jar, fill it with pure water and leave it outside in the sun all day. When you get home from work strain the tea into smaller containers and store in the fridge. It’s good cold. Try adding mint, cinnamon , lemon grass etc.

Heat up 5 tablespoons with 5-8 cups of water in a pot on the stove. Bring the mixture to a near boil, stirring. Take off way before rolling boil begins. Let cool and stir. When around 90% of the floating Yerba sinks, brew is ready. Pour into secondary container through a fine mesh common household strainer. Enjoy..!

Put roughly 4 heaping tablespoons of Yerba in a 10 cup drip coffeemaker; brew it just like coffee, then drink warm with honey, mint, let it cool, or use as base for a cocktail.
